We all have our preferences, and no two persons’ tastebuds respond the same. What is subtle to some is bland to others. For example, many of the traditional varieties of cider apples and perry pears are high in acidity which gives a lively tang on the tongue. Some are also rich in tannin which gives a ‘back of the mouth’ aftertaste familiar to red wine drinkers.
